The resort’s ultrachic signature restaurant, Circa 59, offers a contemporary twist on traditional menu items with artfully reinvented versions of age-old classic favorites such as Skate Wing 'Picatta', Veal 'Oscar', Wild Salmon and Shrimp Scampi, Saffron Infused Chicken and Lobster Minestrone. Executive Chef Bradley Manchester's culinary vision commits to buying fresh and buying local by utilizing the over 25 southern California regional farms on a weekly basis. Ever changing menu selections are updated weekly with eco-friendly seafood, boutique farm meats and locally grown Coachella Valley produce.
This glamorous venue’s overall motif focuses on re-interpreting classic elements, featuring red leather upholstered booths and chairs, backlit lattice cutouts, oversized crystal chandeliers and a spectacular outdoor setting dotted with glowing fireplaces. Circa 59’s private dining room provides up to 20 guests with an intimate dining experience. Groups of 10 or more have the benefit of creating a customized Prix-Fixe menu.
